Carlos Monsonís Terrones, from the coastal city Burriana in Castellón, started his career by studying culinary arts at the Grao de Castellón school of catering. On top of studying, at the age of 16, his experience began at one of the restaurants in the port of his hometown where he started to learn about fish from the fish market and local seafood.
From there, Carlos started a career that would take him to the best restaurants in the world and lead him to start his new project SONATA 32 at NH Collection in Valencia.
Studies in culinary arts at the COSTA DE AZAHAR school in Castellón.
He started in the kitchens of LA REGENTAMAR (Burriana) and DALUÁN (Morella)
He participated in the international BOCUSE D’OR EUROPE representing the Spanish team
Internship at L’ESCALETA (two Michelin stars)
Work experience at EL CELLER DE CAN ROCA (three Michelin stars, best restaurant in the world) with the Roca brothers
He joined the team of the restaurant VERTICAL (one Michelin star) owned by the group LA SUCURSAL
In 2015, he joined the chain NH HOTEL GROUP, leading Miguel Barrera’s project in the restaurant Relevante which was awarded a Bib Gourmand in the Michelin Guide and was recommended by the Repsol Guide.
